Sweet and Savory Griddlecakes

from Sattwa Cafe: Simple and Delicious Recipes

Herbs can help remind the body/mind of its own natural energy patterns.

The Batter
1 cup millet or barley flour
1 cup wheat flour
1/2 tsp earth or sea salt
2 cups water
1 tsp melted ghee

Sweet
1 tsp cinnamon

Savoury
1/2 tsp turmeric
cumin seed

1. Combine batter ingredients and stir, without over-mixing, until it is the consistency of heavy cream.
2. Divide batter into halves, about 1 1/2 cups each, and add sweet spices to one half, turmeric to the other.
3. Warm a griddle with a thin film of ghee over a medium heat. Cook cakes, adjusting the heat if necessary, until both top and bottom are dry and golden. Sprinkle the upper side of the savory cakes with some cumin before flipping. If the batter is thickening, add some more water.
4. Serve with honey (best sweetener for kapha), maple syrup, marmalade and chutneys.

Yields 6 of each variety, 10 cm = 3 1/2 inch diameter.
Serves 2-3 as a main meal. World Influence.

Notes: Everyone enjoys this recipe on some occasion. Politically correct, it neither helps nor hinders anyone in particular.

Pitta and vata constitutional people can use more ghee on the griddle.
